With a little extra time on my hands, i’ve been trying out some new recipes. One that turned out really well was a Greek Pasta Salad. I’ve been eating it with almost every meal… I can’t get enough of it! It was really simple also. After the pasta was cooked, it took less than 5 minutes to put together.
I don’t know about you guys but I absolutely love pasta. I wish that I could eat it for every meal. But, since the new year has started and I vowed to eat healthier, i’m trying to make healthier choices. This pasta salad is perfect because you get your pasta but it is somewhat healither than a traditional pasta dish.
There was only one problem I ran into so I decided to amend the recipe I used for inspiration (which can be found here). I mixed the dressing separately and then tasted it and kid you not I spit it right out. DO NOT pre-mix the dressing. The components of the dressing should be added straight to the salad and tossed together. Since I ruined the dressing, I cheated and used Ken’s Steakhouse Greek Dressing (whoops) but let me tell you, it turned out amazing!
